While the GTX 780 does scale very well with SLI there is some additional frame time variance problems that are found early in our test runs.  This is likely due to the fact that the 780s in SLI are create a more CPU-bound situation in the PC which can cause variance on its own and NVIDIA's frame metering technology has a much harder time fixing it.

SLI performance scales from 25 FPS to 45 FPS average throughout the test run – an increase of 80% for the GTX 780!  Also, because the GPU is again the limiting factor at 2560×1440, there is basically no frame time variance for the NVIDIA options.

With the brand new 320.14 driver we tested with NVIDIA is definitely improving frame variance with Crysis 3, at least at the high end resolutions.  The GTX 780 SLI configuration runs about 72% faster than the single card configuration with very reliable frame delivery.
